Low Carb Breakfast Casserole

My friend Suzy made this for a morning meeting and I really enjoyed it. She shared the recipe, which she'd found on Yummly.com, but they got it from BethsFavoriteRecipes.com and she got it from lowcarbfamily dot com, but that site is now defunct. This serves about 12 with about 2 grams of net carbs per serving.

Ingredients

  • 2 pounds ground sausage
  • 8 ounces cream cheese (softened)
  • 1/2 onions (small, diced)
  • 2 jalapeno chilies (diced, or 1/2 green pepper)
  • 12 beaten eggs (well-, season with salt and pepper)
  • 1 cup shredded cheese (cheddar or mexican blend)

Preparation

Preheat oven to 350°F. Spray a 9" x 13" pan with non-stick cooking spray. Brown sausage and drain excess grease. Press sausage into the bottom of pan. Break cream cheese into pieces and evenly distribute on top of sausage. Sprinkle with onions and peppers. Pour eggs over the sausage mixture. Add shredded cheese to the top.

Bake for 25 minutes, until eggs are just set. Allow to cool for about 5 minutes before cutting.
